Lotus has an on-line demo that displays how an academic institution could use Lotus Notes Domino. At least, that is what I believe it is from the description. I've looked at it a little bit, but not in great detail. The demo appears to be there to answer the very question you are asking.
To see it, (1)go to http://www.lotus.com/ and then click on the (2) "Solutions" link at the left, the upper left hand side of the new page will have an (3) "Academic" link which is what you want to click on next. Next, click on the (4)"Attend Domino University" link found towards the bottom left hand side of the reading area.
You have to register to see the demo, but I found the registration to be harmless. I would suggest that you register giving as little information as possile if you are concerned about it but I think you may want to take a look at the demo.
I can't think of any reason why you could not use Lotus Notes Domino for on-line learning but then, I don't know what you have in mind.
Hopefully, someone who has used Lotus Notes Domino for what you are considering will speak up here.
